Shaped like a falling leaf, and gone with the first frost.

Three movements

The whisking ritual

  1. Sift twice - two passes through fine mesh, never a lump.

  2. Water at eighty degrees, just off the boil, so the leaf stays sweet.

  3. Whisk in a W, sixty strokes, until the froth stands still.
