Meli Phyllo layers paper-thin filo into baklava, galaktoboureko and bougatsa, drenched in Hymettus honey, a few steps off Aristotelous in Thessaloniki.
Each sheet is rolled until the marble shows through, brushed with butter, and laid down. Forty times, every morning.

Our honey comes from hives on the thyme slopes of Mount Hymettus, dark and slow, never heated.
It is poured while the filo is still warm, so it sinks all the way to the fortieth leaf.
