The performance

Kobe Kissaki is theatre of the grill: A5 wagyu and teppanyaki performed on a mirror-polished iron plate in a dark, bordeaux-lit Dubai room.
Twelve counter seats face the plate. Every dinner is staged in three acts - the blade, the flame, the rest.
The blade
The cut is presented and the kissaki drawn - a knife point of Sakai steel.
The flame
Fat meets polished iron at 200 degrees. The sear takes ninety seconds and total silence.
The rest
The beef rests off the heat and melts the moment it is served.

Found it by accident on a walk home and have been back twice since. Even my daughter, who eats almost nothing, cleared the Grilled Lobster. One of the few places in Dubai I would happily queue for.

We had ninety minutes before a train and said so at the door; they made it work. The Yuzu Cheesecake had none of the heaviness this kind of cooking usually carries. The wine list is short and every bottle on it earns its place.

First proper meal out since the baby arrived, so the bar was high. They talked me out of what I was going to order and into the A5 Wagyu Teppanyaki. Good call. It is not a big menu. That is deliberate, but go knowing it.
