Fırın Pide slides boat-shaped flatbreads into a roaring stone oven on a long wooden peel, on the Black Sea coast. The hamur is stretched by hand, the fire is beech wood, the floor is bare stone.

Three minutes on the taş fırın floor. The crust chars, the cheese bubbles, the boat comes back out on the peel. That is the whole recipe.

  • Two of us on a Wednesday, no booking, seated straight away. The Kıymalı Pide is generous without being the sort of portion that defeats you. The bill was fair and nobody tried to sell us anything.

  • I do not usually eat this sort of food and came along under mild protest. If the Kaşarlı Pide is on when you go, order it before you read the rest of the menu. It has rather ruined every other Trabzon restaurant for me.
